Sustainable Seafood Cooking Technique Class with Tim Aupperle

The statistics are staggering. The Food and Agriculture Organization of the United Nations reports that 80 percent of fisheries are fully exploited, overfished, depleted, or recovering from depletion. At the same time, poor fish farming practices can cause a suite of negative impacts ranging from water pollution to altered ecosystems. Whole Foods Market’s goal is to work with the passion of our customers, the commitment of our skilled seafood buyers, and the dedication of our seafood suppliers to help reverse this trend and build a more sustainable seafood supply chain. As a business committed to selling the highest quality seafood, it’s in our interest to ensure that we have seafood to sell far into the future. Many of our customers are educated about issues related to fishing and ask us how we are able to ensure that the seafood we sell is caught legally and that bycatch is minimized.
Whole Foods Market works harder than any other retailer to source seafood from responsibly managed fish farms and abundant, well-managed wild-captured fisheries. This means that we seek fisheries that keep fish populations abundant, rather than allowing overfishing to occur. It also means that in the process of fishing or farming, impacts on the ecosystem are minimized. For wild-caught fish, look for our partnership with the Blue Ocean Institute (BOI) Sustainable Seafood rating system and the Marine Stewardship Council (MSC) label for farm-raised fish. As of April 22, 2012, Whole Foods Market stores are no longer selling red-rated seafood, meeting our goal a year earlier than planned.
Tim Aupperle, Southern Pacific Regional Seafood Coordinator for Whole Foods Market, will discuss the BOI Sustainable Seafood Program and answer questions. Recipes and samples will be distributed. Kids Club Activity with Be the Bee Honey Farm
Dylan Dougherty, founder of Be the Bee Honey, will bring in an observation hive and teach kids about the connection between bees and food and us humans. Learn about bee behavior, biology, similarities and interdependencies of bees and people, nutrition, games for the little ones and, for the older ones, illustrations of how bees read write and do math!
