Blueberry Pie for Breakfast?
by tereza.anderson, July 17, 2011 | Permalink
Liz our healthy eating specialist is unbaking some blueberry pie tomorrow morning for breakfast! Yes, you heard it right! This pie is made with local organic blueberries, almonds, dates, bananas and cinnamon. Everything you’d eat for breakfast anyway.
Stop by the produce department @ 11am tomorrow (Sunday) morning for a slice of pie!
Did you know that blueberries are good for the brain? Blueberries are beneficial not only for improvement of memory, but for slowing down or postponing the onset of other cognitive problems frequently associated with aging.
New studies make it clear that we can freeze blueberries without doing damage to their delicate anthocyanin antioxidants. So buy your blueberries while they’re fresh and bursting with nutrients and freeze them for later on in the year!
Blueberry “Pie”
2 cups almonds
1-2 cups dates, pitted
2 ripe bananas
3 cups blueberries
Method
Process the almonds and ½ of the dates in a food processor or blender. This is the crust so it should hold together when you pinch it between your fingers. Press down firmly in a pan or ramekins.
Process the rest of the dates with the bananas; pour over crust. Sprinkle blueberries on top and refrigerate. It’s great for dessert or even breakfast!
We added for fun: vanilla, lemon zest and cinnamon J
