Apple-Cranberry Muesli Crisp

Experiment with different varieties of apples and dried fruit to make this maple-sweetened treat, delicious for dessert or breakfast. Top servings with spoonfuls of yogurt or a drizzle of cream, if you like.

Ingredients

    10apples, such as Fuji, Gala or Honeycrisp sliced
    1/2 cupdried cranberries or raisins
    2 cupsMuesli cereal or rolled oats*
    2/3 cupwhole wheat pastry flour or brown rice flour*
    1/2 cupwalnuts chopped
    2 tablespoonsflaxseed meal
    1 teaspoonground cinnamon or more to taste up to 2 teaspoons
    6 tablespoonscoconut oil
    4 tablespoonspure maple syrup

Method

Preheat oven to 375°F. Spread apples and cranberries or raisins in a lightly oiled 9x13-inch baking dish.


Combine remaining ingredients and press over apple mixture.


Cover tightly with a lightly oiled sheet of foil and bake until apples are just tender, about 45 minutes. Uncover and cook until golden brown, 20 to 30 minutes longer. Scoop into bowls and serve.


*For a wheat-free version, use 1 cup rolled oats in place of Muesli and use brown rice flour in place of whole wheat pastry flour.
