Arugula with Wild Rice Blend, Avocado and Toasted Seeds

Peppery arugula and toasted seeds spice up this hearty grain-based dish. The diced avocado mashes slightly when tossed for creamy richness.
Ingredients
  • 1 1/2 cup frozen Engine 2 Plant-Strong® Organic Wild Rice Blend Grain Medley, prepared according to package instructions
  • 2 tablespoons raw sunflower seeds
  • 2 tablespoons sesame seeds
  • 4 cups baby arugula
  • 1/2 avocado, diced
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon plus 1 1/2 teaspoons nutritional yeast
  • 1 tablespoon fresh dill, chopped

Method

Combine sunflower seeds and sesame seeds in a large skillet.

Toast over medium heat, stirring frequently, until golden brown and fragrant, about 3 minutes.

In a large bowl, gently toss prepared rice blend, half of the toasted seed mixture, arugula, avocado, vinegar, nutritional yeast and dill together until evenly blended.

Garnish each serving with remaining seed mixture.
