Ingredients

    1 1/2 cupsfrozen Engine 2 Plant-Strong® Organic Wild Rice Blend Grain Medley, prepared according to package instructions
    2 tablespoonsraw sunflower seeds
    2 tablespoonssesame seeds
    4 cupsbaby arugula
    1/2avocado, diced
    2 tablespoonswhite balsamic vinegar
    1 tablespoonplus 1 1/2 teaspoons nutritional yeast
    1 tablespoonfresh dill, chopped

Method

Combine sunflower seeds and sesame seeds in a large skillet.


Toast over medium heat, stirring frequently, until golden brown and fragrant, about 3 minutes.


In a large bowl, gently toss prepared rice blend, half of the toasted seed mixture, arugula, avocado, vinegar, nutritional yeast and dill together until evenly blended.


Garnish each serving with remaining seed mixture.
