Ingredients

    2Clearwater whole frozen lobsters, thawed according to package directions
    Vinaigrette
    1/2 cupextra-virgin olive oil
    1 largeorange, juice and zest of
    2 tablespoonslemon juice
    1 tablespoonchopped shallots
    1/4 cupchopped fresh cilantro
    1/4 teaspoonfine sea salt
    1/8 teaspoonground black pepper

Method

Preheat the oven to 400°F. 


Drizzle lobster with half the vinaigrette.


Bake 15 to 20 minutes or just until flesh turns white. 


Serve with remaining vinaigrette for drizzling or dipping.
