Big Blue Burgers with Cherry Mustard

Give summer a bang of flavor with grilled beef burgers topped with cherry-spiked Dijon mustard, grilled onions and tangy blue cheese.

Ingredients

    1/2 cupfinely chopped pitted fresh cherries (about 8)
    6 tablespoonswhole grain or Dijon mustard
    2 teaspoonscanola oil
    1red onion, thickly sliced, rounds intact
    4 (4-ounce)premade beef burger patties
    1/2 teaspoonfine sea salt
    1/2 teaspoonground black pepper
    4whole wheat hamburger buns, toasted on grill
    4leaves Bibb or romaine lettuce
    1/2 cupblue cheese crumbles

Method

Prepare a grill for medium-high heat cooking. 


Combine cherries and mustard in a bowl; set aside. 


Brush oil on onion slices and then season burgers and onions with salt and pepper. 


Grill all, flipping once, until onions are tender and burgers are cooked to your liking, about 10 minutes. 


Spread mustard on bottom buns; top with lettuce, onions, burgers and blue cheese. 


Top with buns and serve.
