Blackberry-Lavender Shrub

A shrub, or drinking vinegar, is a sugar and vinegar mixture infused with a combination of fruit and herbs. This summery blackberry and lavender version is great when splashed in sparkling water, or use it for cocktails.

Ingredients
- 2 pints blackberries, roughly chopped (about 2 cups)
- 1/4 teaspoon dried lavender
- 2 cups sugar
- 2 cups champagne vinegar
Method
In a medium bowl, combine blackberries, lavender and sugar. Cover and refrigerate for 24 hours.
Arrange a fine mesh sieve over a bowl.
Strain fruit mixture into the bowl and press to extract all juices.
Add vinegar and whisk vigorously.
Refrigerate in an airtight container for up to 1 month.
To use, fill a glass with ice and sparkling water, then stir in 1 tablespoon of the shrub; add more to taste.
