Coconut Mochi Cake

Sweet rice flour creates the spongy texture of this unique cake, modeled after mochi, a Japanese rice cake that’s often used to make desserts. Here it is flavored with orange zest and a hint of coconut from the coconut milk.

- 1 1/2 cup sweet rice flour
- 1 cup sugar
- 1 teaspoon baking powder
- 3 large eggs
- 1 (13.5-ounce) can coconut milk
- 1 1/2 teaspoon orange zest
- 1 1/2 teaspoon pure vanilla extract
Method
Preheat the oven to 350F.
In a large bowl, whisk together flour, sugar and baking powder.
In a separate bowl, whisk eggs until blended.
Add coconut milk, orange zest and vanilla, and whisk until combined.
Add coconut milk mixture to flour mixture and whisk until combined.
Pour batter into an 8x8-inch baking pan.
Bake about 1 hour or until a toothpick inserted into the center comes out clean.
Cool completely in the pan on a wire rack.
