Ingredients

    1 cupraw cashews, soaked in water overnight and drained
    8dates, pitted and soaked in warm water to cover for 10 minutes; reserve liquid
    1 teaspoonpure vanilla extract
    2 teaspoonsground cinnamon

Method

Place cashews, dates plus their reserved soaking liquid, vanilla and cinnamon in a high-speed blender or food processor.


Pulse the mixture several times and then blend until the ingredients are thick, smooth and creamy.


If needed add 1 tablespoon at a time of warm water to the blender to reach the desired consistency.


Use the frosting immediately, or store in an airtight container and refrigerate for up to 3 days or freeze for up to 1 week.
