Creamy Cinnamon Frosting

Cashews provide a creamy texture that balances the spicy kick of cinnamon in this decadent plant-based frosting. Frost your favorite baked goods or use as a dip for fresh fruit.

Ingredients
- 1 cup raw cashews, soaked in water overnight and drained
- 8 dates, pitted and soaked in warm water to cover for 10 minutes; reserve liquid
- 1 teaspoon pure vanilla extract
- 2 teaspoons ground cinnamon
Method
Place cashews, dates plus their reserved soaking liquid, vanilla and cinnamon in a high-speed blender or food processor.
Pulse the mixture several times and then blend until the ingredients are thick, smooth and creamy.
If needed add 1 tablespoon at a time of warm water to the blender to reach the desired consistency.
Use the frosting immediately, or store in an airtight container and refrigerate for up to 3 days or freeze for up to 1 week.
