Refreshing and creamy, this lemony cucumber dressing is equally delicious spooned over salad greens, or thickened with silken tofu and served as a dip with crudités.

Ingredients

    1 largeEnglish cucumber, seeded and roughly chopped
    1/2 cup365 Everyday Value® Organic Vegan Mayo
    1/4 cuplemon juice
    2 tablespoonschopped fresh dill
    1 teaspoononion powder
    1/2 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Combine cucumber, mayo, lemon juice, dill, onion powder, salt and pepper in a blender and blend until smooth, scraping down the sides and stirring as needed.
