Dijon Vinaigrette

This classic, French vinaigrette is a bright dressing for greens like romaine and red leaf lettuce. Add a pinch of sugar, if you like.

- 1 tablespoon finely chopped shallot
- 1 tablespoon Dijon mustard
- 1/4 cup red wine vinegar or cider vinegar
- 2/3 cup extra-virgin olive oil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
Method
Whisk together shallots, mustard and vinegar in a medium bowl.
Drizzle in oil while whisking constantly, then season with salt and pepper.
