Engine 2 Fiesta Burritos

These smoky, spicy burritos are stuffed with a delicious medley of brown rice, sweet corn and black beans. Roll up the mixture with tomatoes, lettuce and avocado for an ultra-satisfying meal.

Ingredients

    1 smallwhite onion, diced
    1/2 teaspooncumin seeds
    1/4 cuplow-sodium vegetable broth
    1 can (14.5-ounce)no-salt-added diced fire-roasted tomatoes
    2 tablespoonscider vinegar
    2 tablespoonsfinely chopped pitted dates
    1 teaspoonfinely chopped chipotle pepper in adobo sauce, plus more to taste
    2 cupsfrozen Engine 2 Plant-Strong® Organic Fiesta Blend Grain Medley
    2 tablespoonsfinely chopped fresh cilantro
    1green onion, finely chopped
    4Engine 2 Plant-Strong® Organic Sprouted Ancient Grains or Brown Rice Tortillas
    8Bibb or butter lettuce leaves
    1avocado, sliced

Method

Heat a large skillet over medium-high heat.


Add onion and cook, stirring occasionally, until beginning to brown and stick to the pan, 2 to 3 minutes.


Stir in cumin.


Add broth and cook until onion is soft and browned, 1 to 2 minutes.


Lower heat to medium and add tomatoes, vinegar, dates and chipotle.


Simmer for 2 minutes.


Stir in grain medley, cilantro and green onions and cook until heated through, 3 to 4 minutes.


Remove from heat.


Briefly heat tortillas in a dry skillet over medium heat, flipping with tongs to warm each side.


Lay tortillas on serving plates.


Top with lettuce and avocado and then grain mixture.


Roll up tortillas and serve.
