Fizzy Lemon Floats

This simple dessert makes the most of creamy limoncello gelato, topping it with lemon soda and lemon juice for a refreshing sweet-tart finish.

Ingredients
- 2 cups Whole Foods Market Limoncello Gelato (about 3/4 container)
- 1 (25.4-ounce) bottle lemon Italian soda, chilled
- 1 small lemon, quartered and seeded
- 8 sprigs fresh mint or rosemary, crushed gently to release their oils
Method
Using a small ice cream scoop, divide gelato between 4 tall glasses (1/2 cup in each).
Pour over lemon soda and then squeeze a lemon wedge into each, tossing it into the glass when done.
Garnish each float with 2 mint sprigs and serve immediately.
