Forbidden Rice Salad with Bell Peppers

Forbidden rice is an unusual, nutty-flavored black rice, which makes a delicious foundation for the colorful veggie salad. Tamari and sesame dressing brings it all together.

Ingredients
- 2 cups forbidden rice
- 2 tablespoons tamari soy sauce
- 3 tablespoons sesame oil (not toasted sesame oil)
- 1 pound sweet potato, peeled and diced
- 3 red bell peppers, seeded and diced
- 1/2 bunch sliced green onions (about 3 or 4)
- 1/4 teaspoon fine sea salt
- 1/8 ground black pepper
Method
Preheat the oven to 425°F. Spread sweet potato on a baking sheet and roast until soft, about 30 minutes.
Meanwhile, bring rice, 3 1/2 cups water and a pinch of salt to a quick boil, cover and lower heat to a simmer for 30 minutes.
Turn heat off and let rice sit while you whisk together sesame oil and tamari.
If necessary, drain any remaining liquid from bottom of saucepan.
Add sesame oil and tamari mixture to saucepan and toss with rice while still warm.
Let cool, then add sweet potatoes, red peppers, yellow peppers, green onions, salt and pepper to taste.
