Ginger-Baobab Tonic

This cold and bubbly tonic is refreshing and soothing. Add other herbs such as bay leaf or tarragon in place of the thyme, if you like.

Ingredients
- 2 thick slices lemon
- 1 (2-inch) piece fresh ginger, thinly sliced
- 2 small sprigs fresh thyme
- 2 tablespoons baobab powder
- 2 teaspoons agave nectar or honey (optional)
- 1 cup ice cubes, plus more for serving
- 1/2 cup unflavored sparkling water, chilled
Method
Combine lemon, ginger, thyme and 1 cup water in a small saucepan and bring to a boil, muddling ingredients gently.
Cover, remove from heat and let steep for 10 minutes.
Strain into a small bowl, discarding solids.
Whisk in baobab powder and agave (if using) until incorporated, and then stir in ice cubes until melted.
Pour over more ice in tall glasses and top off with sparkling water to taste.
