Goat Cheese Baked in Tomato Sauce

This appetizer of toasted garlic bread dipped in creamy baked goat cheese and tomato sauce is inspired by the classic Spanish tapas, Queso de Cabra con Tomate.

Ingredients
- 2 cloves garlic, finely chopped
- 1/4 cup olive oil
- Baguette, sliced
- 8 ounces goat cheese
- 1 cup marinara sauce
- Basil leaves (optional garnish)
Method
Preheat oven to 350°F.
In a small bowl, combine the garlic and olive oil.
Brush each slice of bread with the oil and transfer to a baking sheet. Set aside.
Form the goat cheese into a 1/2-inch pancake and place in a shallow baking dish.
Ladle tomato sauce into the dish so that the sides of the cheese are covered, but the top is still exposed.
Bake, uncovered, until the sauce begins to bubble at edges and the cheese is hot, about 25 minutes.
During last 10 minutes of baking, transfer the bread to the oven and toast until golden brown, about 10 minutes.
Garnish cheese with basil, if desired.
