Gorgonzola and Dried Cherry Salad

This simple combination of leafy green lettuce, sweet red onion, sliced apples, roasted pecans and dried cherries tossed in raspberry vinaigrette can serve as a main lunch entrée or on the side in a more extravagant meal.

Ingredients

    1/4 cupextra-virgin olive oil
    2 tablespoonsraspberry vinegar
    1 clovegarlic, finely chopped
    1/8 teaspoonfine sea salt
    1/4 teaspoonground black pepper
    1/2 cuptoasted pecans
    1/4 cupdried cherries
    1head leafy green lettuce, torn into bite-size pieces
    1Granny Smith apple, peeled and thinly sliced
    1/2red onion, thinly sliced
    1/2 cupcrumbled Gorgonzola cheese

Method

Whisk together oil, vinegar, garlic, salt and pepper in a small bowl to make a dressing. 


Toss pecans, cherries, lettuce, apples and onions together in a large salad bowl. 


Top with dressing and toss gently to coat. Garnish with cheese and serve.
