Guacamole with Cilantro
Makes about 1 cup

Though toned down for young palates, this guacamole is still fragrant with fresh cilantro and lime juice.

Ingredients
- 1 ripe but firm medium avocado, peeled and pitted
- 1 tablespoon lime juice
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon finely chopped fresh cilantro
- 1/8 teaspoon ground cumin
Method
In a small bowl, mash avocado with a fork until smooth.
Stir in lime juice, oil, cilantro and cumin and serve.
The guacamole will keep refrigerated in an airtight container for up to 3 days.
