Hearty Turkey Noodle Soup

An after-Thanksgiving tradition in some homes, this is a smart and satisfying way to use leftover turkey.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 2 cloves garlic, thinly sliced
- 1 yellow onion, chopped
- 2 teaspoons chopped fresh thyme
- 3 1/2 cups low-sodium chicken broth
- 2 cups baby spinach
- 2 cups cubed or shredded turkey or chicken
- 1 1/2 cup egg noodles
- 1 (15.0-ounce) can no-salt-added cannellini beans, drained and rinsed
- 3 carrots, sliced into rounds
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
Method
Heat oil in a large pot over medium-high heat.
Add garlic, onion and thyme; cook until fragrant, about 3 minutes.
Add broth, spinach, turkey, noodles, beans, carrots, salt and pepper and stir to combine.
Bring to a boil, reduce heat, cover and simmer about 15 minutes, or until noodles are tender. Ladle into bowls and serve.
