Hearty Turkey Noodle Soup

An after-Thanksgiving tradition in some homes, this is a smart and satisfying way to use leftover turkey.

Ingredients

    1 tablespoonextra-virgin olive oil
    2 clovesgarlic, thinly sliced
    1yellow onion, chopped
    2 teaspoonschopped fresh thyme
    3 1/2 cupslow-sodium chicken broth
    2 cupsbaby spinach
    2 cupscubed or shredded turkey or chicken
    1 1/2 cupsegg noodles
    1 can (15-ounce)no-salt-added cannellini beans, drained and rinsed
    3carrots, sliced into rounds
    1/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Heat oil in a large pot over medium-high heat. 


Add garlic, onion and thyme; cook until fragrant, about 3 minutes. 


Add broth, spinach, turkey, noodles, beans, carrots, salt and pepper and stir to combine. 


Bring to a boil, reduce heat, cover and simmer about 15 minutes, or until noodles are tender. Ladle into bowls and serve.
