How to Cook: Gluten-Free, Dairy-Free Gravy

This easy gravy has a pure, old-fashioned flavor without using either flour or butter, which makes it a handy recipe for the holidays. For best results, your pan drippings should include about 1 tablespoon fat (the thick, light-colored liquid that rises to the top) and 3 tablespoons juices. If the pan juices don’t easily pour out of your roasting pan, you can place the pan over medium-low heat and deglaze by adding a splash of broth or water and scraping the bottom. Ingredients

    1/4 cupdairy-free pan drippings (from roast turkey, beef, chicken, pork or lamb)
    2 cupslow-sodium turkey broth, divided
    3 tablespoonsarrowroot starch
    1/4 teaspoonfine sea salt, to taste
    1/4 teaspoonground black pepper

Method

Put pan drippings in a medium saucepan and place over medium heat.


Whisk 1 1/2 cups of the broth into the saucepan and bring just to a boil.


Meanwhile, in a small bowl, whisk together arrowroot and remaining 1/2 cup broth.


Whisk in arrowroot mixture just until smooth and the mixture begins to thicken, then immediately remove from heat (excess heat will compromise the thickening power of arrowroot).


Stir in salt and pepper and serve.
