Indian-Style Spiced Yogurt Marinade

Yogurt is a natural meat tenderizer. This spicy mixture produces a flavorful golden crust on all manner of meats, from chicken to lamb. Simply toss uncooked meat in the marinade and refrigerate for about 4 hours before grilling or roasting.

- 1 1/2 cup nonfat plain yogurt
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon garam masala
- 3 cloves garlic, finely chopped
- 1 (1-inch) piece fresh ginger, grated
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 3 tablespoons lemon juice
Method
In a bowl, stir together yogurt, oil, lemon juice, garam masala, garlic, ginger, salt and pepper until blended.
Marinade will keep in an airtight container in the refrigerator for up to 3 days.
