Melon Seed Agua Fresca

Save the seeds from peak-season summer melons and use them to make this creamy and refreshing agua fresca. Garnish with sliced melon or fresh mint sprigs to add a fragrant punch to this summer cooler.

Ingredients
- 1 1/2 cup cantaloupe or honeydew seeds (from about 2 melons), with pulp from just around the seeds (no need to wash them!)
- 1/4 cup honey
- 1 1/2 teaspoon finely chopped fresh ginger
- 1 1/4 teaspoon pure vanilla extract
- Ice, for serving
Method
In a blender, purée 4 cups water, cantaloupe seeds, honey, ginger and vanilla. Work in batches, if necessary.
Place a fine-mesh sieve over a large bowl or pitcher and strain contents of the blender, pressing with the back of a spoon to extract as much liquid as possible.
Discard the remaining solids.
Taste agua fresca and stir in more honey if desired.
Serve over ice.
