Orange Ginger Salad

Citrus, ginger and mint combine in this perfectly easy, palate-cleansing salad. To make it even prettier, choose a colorful variety of citrus, like blood oranges, pink grapefruit and white grapefruit. Serve over coconut sticky rice for an impressive dessert.

Ingredients
- 8 seedless oranges
- 1 teaspoon grated fresh ginger
- 2 teaspoons thinly sliced fresh mint
- 2 teaspoons lime juice
Method
Cut thin slices off top and bottom of 1 orange and set on a cutting board.
Slice down along the curve of the fruit, removing all skin and white pith, and cutting all the way to the flesh.
Working over a bowl, cut along each side of the membranes to release the sections, allowing them to fall into the bowl along with any juice.
Repeat with remaining oranges.
Gently stir in ginger, mint and lime juice.
Let sit at least 10 minutes for flavors to come together. Chill until ready to serve.
