Pineapple Noodle Kugel

Pineapple puts a spin on traditional kugel in this cornflake-topped sweet dessert made with egg noodles. Scoop servings into bowls and serve warm, topped with whipped cream.

Ingredients

    1/3 cupseedless raisins
    6eggs
    1/4 cuphoney
    2 tablespoonssugar
    1 cupcanned crushed pineapple, drained well
    8 tablespoons(1 stick) unsalted butter, melted, divided
    1/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper
    Canola spray oil, as needed
    8 ouncesdried egg noodles, cooked according to package directions and drained
    1 cupnatural corn flakes, crushed
    1 teaspoonground cinnamon
    1 tablespoonbrown sugar

Method

Preheat the oven to 325°F.


Soak raisins in hot water for 5 minutes and then drain.


In a mixing bowl, combine eggs, honey, sugar, pineapple, soaked raisins, 4 tablespoons of the butter, salt and pepper; set aside.


Spray the bottom of a 9x13-inch baking dish with spray oil.


Fill with cooked noodles, then pour egg mixture over the noodles.


In a small bowl, combine corn flakes, cinnamon, brown sugar and remaining 4 tablespoons butter and toss to combine.


Sprinkle over noodles and bake, uncovered, for 45 minutes, or until a toothpick inserted in the center comes out clean.
