Pineapple Teriyaki Beef

Look for Asian-style stir-fry vegetables, already cut and ready to go, in the frozen foods section. Paired with juicy steak and teriyaki sauce, this is a quick meal to easily prepare on busy week nights.

Ingredients
- 1 tablespoon canola oil
- 2 cloves garlic, crushed
- 1 pound boneless chuck steak, cut into 1/8-inch slices
- 2/3 cup prepared low-sodium teriyaki sauce
- 1 (20.0-ounce) can pineapple chunks, with juice
- 1 1/2 cup frozen Asian-style stir-fry vegetables
- 3 green onions, chopped
- 2 cups frozen cooked jasmine or brown rice, prepared according to package directions
Method
In a large skillet, heat oil over medium high heat; add garlic and sliced steak.
Cook until garlic is golden and meat is seared on the outside, about 4 minutes.
Reduce heat to low; add teriyaki sauce, pineapple and 1/4 cup of its juice.
Simmer until the pineapple has softened slightly, about 10 minutes.
Add vegetables and green onions and cook until onions are heated through, about 5 minutes.
Serve over prepared rice.
