Method
In a large skillet, heat oil over medium-low heat.
Add onion, salt and pepper and cook, stirring occasionally, until browned and caramelized, about 15 minutes. Set aside.
Preheat the oven to 400°F. Place pizza crust on a baking sheet.
Dot with crème fraîche and sprinkle with the caramelized onion, Le Gruyère and prosciutto.
Bake until the crust is browned and the cheese is bubbling, about 12 minutes. Cool a few minutes and cut into wedges.
