Quick Cajun Catfish

Love blackened catfish? Here's a less messy—yet just as tasty—version. Serve the catfish with succotash and plenty of lemon wedges.
Ingredients
- 4 (5- to 6-ounce) catfish fillets
- 2 teaspoons blackened cajun spice seasoning
- 2 tablespoons canola oil
Method
Sprinkle spice mix all over catfish.
Heat 1 tablespoon of the oil in a large skillet over medium-high heat.
Arrange two of the fillets in the skillet and cook, flipping once, until cooked through and golden brown, about 5 minutes.
Transfer to plates, wipe skillet clean and repeat with remaining 1 tablespoon oil and remaining fillets.
