The slightly nutty, rich flavor of Cowgirl Creamery's Organic Mt. Tam cheese is an excellent match for sweet raspberries and walnuts.

Ingredients

    4 teaspoonsred wine vinegar
    1 tablespoonraspberry fruit spread
    1/2shallot, minced
    1/4 teaspoonfine sea salt
    1/8 teaspoonground black pepper
    1 tablespoonwalnut oil
    6lightly packed cups Bibb or Boston lettuce leaves (about 4 ounces), torn into pieces
    1 package (6-ounce)fresh raspberries
    1/3 cupwalnut halves, toasted and coarsely chopped
    1/2wheel (5 ounces) Organic Mt. Tam cheese, cut into thin wedges

Method

In a large bowl, whisk together vinegar, fruit spread, shallot, salt, pepper and 1 tablespoon water. 


Whisk in the walnut oil until dressing thickens slightly. 


Add lettuce and raspberries and toss to coat. 


Spread over a platter and top with walnuts and cheese.
