Raw Vegetable "Pasta" with Tomatoes and Herbs

Try this delicious "pasta" made from strips of summer squash and zucchini tossed with tomatoes, olive oil and fresh basil and oregano for a dish packed with bright flavors.

Ingredients

    2zucchini squash
    2yellow summer squash
    1/4 teaspoonfine sea salt
    1 tablespoonextra-virgin olive oil
    1 cupcherry or grape tomatoes, halved
    5oil-packed sundried tomatoes, drained and thinly sliced
    1/2shallot, finely chopped
    1 clovegarlic, finely chopped
    1 tablespoonfinely chopped fresh basil
    1 teaspoonfinely chopped fresh oregano
    1/8 teaspoonground black pepper

Method

Using a vegetable peeler, carefully shave the zucchini and yellow squash lengthwise into thin strips. 


In a large bowl, gently toss together all ingredients. Transfer to a platter and serve immediately.
