Red Pepper and Basil White Bean Burgers

Make these basic bean burgers and enjoy a meatless summer feast. The burger mixture may seem loose but these will certainly hold up and keep their shape when cooked on a hot grill. Serve with your favorite burger toppings.

Ingredients
- 1/2 cup chopped roasted red peppers, drained well
- 1/2 cup ground flaxseed
- 1/4 cup packed fresh basil leaves
- 1/4 cup rolled oats
- 2 cloves garlic
- 1 teaspoon pimentón (smoked paprika)
- 2 (15.0-ounce) cans no-salt-added cannellini beans, drained and rinsed
Method
Place peppers, flaxseed, basil, oats, garlic and smoked paprika in the bowl of a food processor and process until blended.
Add beans and pulse briefly until mixture just comes together in a ball, scraping down sides of bowl occasionally. Be careful not to fully purée the beans but rather leave them chunky.
Preheat grill to medium-high heat.
Form burger mixture into 6 even patties.
Grill burgers, covered, for 3 minutes on each side, or until lightly browned and heated through.
Place lettuce leaves on buns and top with burgers, tomato slices and avocado.
