Shrimp and Pineapple Kabobs

Serve these sweet and savory kabobs over steamed brown rice. Add a green salad with tomatoes and feta cheese for a perfect summer meal.

Ingredients

    1 poundlarge shrimp, peeled and deveined with tails on
    1 can (15-ounce)drained (or 1 cup fresh) pineapple chunks
    1red bell pepper, cut into 1-inch squares
    1yellow or white onion, cut into 1-inch squares
    4(16-inch) bamboo skewers, soaked in water 1/2 hour
    1/4 cupbalsamic vinaigrette

Method

Lightly oil a grill grate and preheat to medium-high. 


Alternate shrimp, pineapple and vegetables onto soaked skewers. 


Place skewers on hot grill and cook 3 to 5 minutes, turning once and basting with vinaigrette.
