Shrimp, Watermelon and Goat Cheese Salad

This bright and refreshing main-dish salad is perfect for backyard picnics. Grill thickly sliced whole wheat or sourdough bread alongside the shrimp.

Ingredients
- 1 pound large tail-on shrimp
- 1/4 cup prepared balsamic vinaigrette
- 2 small ripe tomatoes, quartered
- 2 cups watermelon chunks, seeds removed
- 2 ounces fresh goat cheese, crumbled
- 2 tablespoons chopped fresh basil
- 1/4 teaspoon fine sea salt
- Ground black pepper, to taste
Method
Prepare a grill for medium-high heat cooking.
Thread shrimp onto skewers and brush with 2 tablespoons of the vinaigrette. (If using wooden skewers, soak in water for 30 minutes before assembling.)
Grill shrimp for 2 to 3 minutes, basting with remaining 2 tablespoons vinaigrette and flipping skewers a few times.
Arrange tomatoes, watermelon and cheese on a large platter or individual plates.
Top with shrimp skewers, season with salt and pepper, and garnish with basil. Serve additional vinaigrette on the side.
