Sour Cream Chicken and Mushroom Pasta

This tasty pasta dish can be prepared for about $3.17 per serving. Enjoy with bread and a fresh green salad on the side.
Ingredients
- 3/4 pound chicken tenders
- 1/4 cup all-purpose flour
- 1/4 teaspoon fine sea salt
- 1 tablespoon unsalted butter
- 1 tablespoon extra-virgin olive oil
- 1 cup sour cream
- 1 cup chicken broth
- 1 1/2 cup sliced button mushrooms
- 1 1/2 teaspoon paprika
- 1/2 pound dried fettuccine pasta
- 1/4 teaspoon ground black pepper
- 1/4 cup chopped fresh flat-leaf parsley
Method
Put chicken, flour, salt and pepper into a large bowl and toss to combine. Set aside.
Heat butter and olive oil in a skillet over medium heat.
Add chicken and cook until brown on all sides, about 10 minutes.
Stir in sour cream, broth, mushrooms and paprika.
Reduce heat to low, cover and simmer until chicken and mushrooms are cooked through and the sauce has thickened, about 20 minutes.
Meanwhile, bring a large pot of salted water to a boil.
Add pasta and cook until tender, about 9 minutes.
Drain and divide among four serving bowls. Top with chicken mixture and sprinkle with parsley before serving.
