Spicy Lamb Burgers with Cucumber Raita

Raita, a cool cucumber and yogurt sauce, makes an ideal complement to warmly spiced lamb burgers.

Ingredients

    <b>Cucumber Raita</b>
    1 cuplowfat plain yogurt
    1/2 mediumcucumber, peeled, seeded and finely chopped
    2green onions, thinly sliced
    1/4 cupchopped fresh cilantro
    1 teaspoonground cumin
    1/2 teaspoonground ginger
    1/4 teaspoonfine sea salt

    1 teaspoonground cumin
    1/2 teaspoonground coriander
    1/4 teaspoonground ginger
    1/8 teaspoonground cinnamon
    1/8 teaspoonground cloves
    1/2 teaspoonfine sea salt
    1/8 teaspoonground black pepper
    1/8 teaspooncayenne pepper
    1 poundlean ground lamb
    4leaves romaine lettuce
    2whole wheat pitas, halved
    1/4 teaspoonground black pepper

Method

For the raita, combine the yogurt, cucumber, onion, cilantro, cumin, ginger, salt and pepper in a medium bowl and set aside.


For the burgers, prepare a grill for medium heat cooking. 


Combine the spices and lamb in a medium bowl and shape into four patties. 


Grill burgers, flipping once, until meat reaches desired degree of doneness (3 to 4 minutes per side for medium rare, 5 minutes per side for medium and 6 to 7 minutes per side for well done). 


Tuck lettuce and lamb burgers into pita pockets and top each with a generous spoonful of raita; serve remaining raita on the side.
