Ingredients

    1 tablespoonextra-virgin olive oil or canola oil
    1 poundshelled pumpkin seeds
    1/2 teaspooncayenne pepper
    4 teaspoonsreduced-sodium tamari
    1 teaspoonevaporated cane or natural brown sugar (optional)

Method

Heat oil in a large nonstick skillet over medium heat.


Add pumpkin seeds and cook until they start to pop and turn golden brown, about 2 to 3 minutes.


Add tamari, sugar and cayenne.


Continue to cook until seeds are coated and glossy, about 1 more minute.


Arrange mixture in a single layer on a rimmed baking sheet lined with parchment paper. Set aside to cool before serving.
