Sprouted Grain Orange French Toast with Bananas

A mixture of banana, coconut milk and orange juice makes a sweet and tropical coating for French toast.

Ingredients
- 2 bananas, divided
- 2/3 cup light canned coconut milk
- 1/2 cup orange juice
- 1/4 teaspoon grated orange zest
- 1 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 tablespoons canola oil, divided
- 8 slices sprouted 100% whole grain bread
Method
Place 1 banana, coconut milk, juice, zest, vanilla and cinnamon in a blender and purée.
Pour mixture into a wide shallow dish.
Heat 1 tablespoon oil in a large skillet over medium heat.
Dip each piece of bread, one by one, into the coconut milk mixture.
Drain excess liquid before placing bread on hot skillet.
Cook in batches, 2 to 3 minutes or until just browned on the bottom, turn, and brown the other side, 2 to 3 minutes more.
Cook remaining French toast in batches with remaining oil.
Slice remaining banana and serve on top of toast.
