Tofu Veggie Skewers with Pineapple Mango Jerk Sauce

Transform mango into a spiced barbeque sauce that's perfect for glazing these colorful skewers. If you like, you can marinate the tofu and veggies in the sauce for an extra punch of flavor.

Ingredients
- 1/2 cup chopped fresh mango, (from about 1/2 mango)
- 2 green onions, roughly chopped
- 2 tablespoons rice vinegar
- 4 1/2 teaspoons low-sodium tamari
- 1 teaspoon ground allspice
- 1/2 small jalapeño pepper, seeded and chopped
- 1 (14.0-ounce) package extra-firm tofu, patted dry and cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch cubes
- 1 yellow bell pepper, cut into 1-inch cubes
- 1 1/2 cup (1-inch) pineapple cubes
Method
Prepare a grill for medium-high-heat cooking.
In a blender or food processor, blend mango, green onion, vinegar, tamari, allspice and jalapeño until smooth.
Thread tofu, peppers and pineapple onto skewers. (If using wooden skewers, soak in water for 30 minutes before assembling).
Brush with mango sauce and grill until browned and vegetables are tender, about 4 minutes per side.
Serve with any remaining sauce.
