Turmeric-Cider Tonic

This warm tonic is particularly well suited to the fall and winter, when fresh apple cider is readily available. At other times of year, substitute apple juice, if you like.

Ingredients
- 1 1/4 cup unsweetened plain almondmilk
- 1 1/4 cup unsweetened apple cider
- 1 (2-inch) piece fresh turmeric root, finely grated
- 2 cinnamon sticks
- 1 teaspoon cider vinegar
Method
Combine almondmilk, cider and turmeric in a small saucepan and vigorously whisk together.
Add cinnamon sticks and bring just to a simmer.
Lower heat to medium-low and simmer very gently for 2 minutes. (If mixture separates, whisk or stir to bring it back together.)
Remove from heat and stir in vinegar.
Strain into mugs and serve.
