Vegan Chocolate Banana Pudding

No one will guess that this rich, dark chocolate pudding counts tofu as its secret ingredient. Sweetened with dates and ripe bananas, this decadent pudding tastes even better topped with fresh berries, sliced apples or extra diced banana.

Ingredients
- 6 pitted dates, soaked in warm water for 10 minutes
- 4 large bananas, broken into chunks
- 1 (14.0-ounce) package extra-firm tofu, drained
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon ground cinnamon
- 1 tablespoon pure vanilla extract
Method
Drain dates, discarding soaking liquid, and squeeze out excess water.
Transfer dates to a food processor or blender.
Add bananas, tofu, cocoa powder, vanilla and cinnamon and blend until smooth and creamy.
Pudding will keep in an airtight container in the refrigerator for up to 3 days.
