Vinegar-Free Potato Salad

The burst of flavors from fresh basil, red onion, olives and celery combine with tender potatoes in a delicate olive oil and lemon dressing for a savory salad perfect for everyone, including those on vinegar-free diets.

Ingredients
- 5 pounds creamer potatoes
- 1/4 cup extra-virgin olive oil
- 1 lemon, juice of
- Salt and pepper, to taste
- 2 celery stalks, chopped
- 1 red onion, sliced
- 6 fresh basil leaves, thinly sliced
- 1/2 cup sliced pitted oil- or water-packed black olives
Method
Boil the potatoes until tender, then drain well.
When cool enough to handle, peel potatoes, if desired, then cut into chunks or slices.
Put oil, lemon juice, salt and pepper into a large mixing bowl and whisk until well blended.
Add potatoes, celery, onions, basil and olives and toss gently to coat.
Spoon into bowls and serve.
