Walnut Cranberry Soda Bread

Serve this dried cranberry–studded soda bread spread with soft butter or a bit of cream cheese. If you don't have dried cranberries, dried currants, cherries or raisins could also be substituted.

- 1 1/2 cup all-purpose flour
- 1 cup whole wheat pastry flour
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1/2 cup dried cranberries
- 1/2 cup walnut pieces
- 1 cup nonfat plain yogurt
- 1/3 cup water
Method
Preheat oven to 375°F.
Whisk together flours, baking soda, salt and walnuts in a large bowl; set aside.
Combine yogurt and water in a small bowl and stir to combine.
Add yogurt mixture and cranberries to bowl with flour mixture and stir until a ball of dough forms.
Turn dough out onto a lightly floured surface and knead for 1 minute, adding more flour as needed.
Transfer dough to an ungreased baking sheet and pat out into a circle.
Mark an X on top with the tip of a sharp knife, then bake until golden brown, 30 to 35 minutes.
Transfer to a rack to cool, then slice and serve.
