Whole Grain Toaster Waffles
Makes 16 waffles

Make up a big batch of these healthy whole grain waffles, then keep them in the freezer for easy morning meals. Pop them in the toaster to reheat and achieve traditional waffle crispness.

Ingredients
- 2 1/2 cups whole wheat pastry flour
- 1/2 cup cornmeal
- 1/2 cup flaxseed meal
- 1 tablespoon plus 1 teaspoon baking powder
- 2 cups unsweetened plain almondmilk
- 1 cup unsweetened applesauce
- 2 tablespoons honey
Method
Preheat a waffle iron.
In a large bowl, combine flour, cornmeal, flaxseed meal and baking powder.
In a separate bowl, whisk together almondmilk, applesauce and honey.
Add applesauce mixture to flour mixture and stir just until evenly blended.
Use 1/3 cup batter for each waffle.
Let cooked waffles cool completely, then store in resealable, freezer-safe plastic bags in the freezer.
To serve, toast waffles in a toaster until golden brown and crisp.
