Winter Crunch Salad

This fresh winter salad is marinated in tangy citrus vinaigrette and topped with roasted cashews. Serve as a side dish or spoon over salad greens for a light main course.

Ingredients

    1 cupvery small broccoli florets
    1 cupvery small cauliflower florets
    1/2 cup365 Everyday Value® Organic Fat Free Balsamic Vinaigrette
    1 teaspoonzest and 2 tablespoons juice from 1 orange
    3carrots, thinly sliced
    1Pink Lady apple, peeled and chopped
    1/2 cup365 Everyday Value® Roasted & Salted Cashews, chopped

Method

In a large bowl, combine broccoli, cauliflower, vinaigrette, zest, orange juice, carrots and apple; toss to combine. 


Scatter cashews over the top and serve. Or, cover and chill salad for 8 hours or overnight, add cashews and serve.
