Yogurt-Cucumber Dressing
Makes 2 cups

Here's a dressing that's cool and crisp, and especially nice with rosy tomatoes. Use it to dress greens or as a dip for crunchy vegetables.

Ingredients
- 1 medium cucumber, peeled and chopped
- 1 tablespoon dried dill
- 1/2 teaspoon finely chopped jalapeño pepper
- 1 clove garlic
- 1 tablespoon lemon juice
- 1 cup low-fat plain yogurt
- 1 tablespoon extra-virgin olive oil
Method
Combine cucumber, dill, jalapeño and garlic in a blender or food processor; blend until smooth and creamy.
Transfer to a bowl, add lemon juice, yogurt and oil and stir well to combine.
Cover and refrigerate for at least 1 hour before serving.
