Amaranth Banana Bread

Ingredients

    1 1/4 cupswhole wheat pastry flour
    3/4 cupamaranth flour
    2 teaspoonsbaking powder
    1/2 teaspoonbaking soda
    1/2 teaspoonfine sea salt
    1 cupmashed ripe bananas (about 3 bananas)
    2 largeeggs
    1/3 cupnonfat plain yogurt
    2 tablespoonscanola oil, plus more for the pan
    3/4 cupsugar
    3/4 cupchopped walnuts, divided

Method

Preheat the oven to 350°F. Lightly coat a 9x5-inch loaf pan with nonstick spray.


In a large bowl, whisk together whole wheat pastry flour, amaranth flour, baking powder, baking soda and salt.


In a separate bowl, whisk together bananas, eggs, yogurt, oil and sugar.


Add banana mixture to flour mixture and stir just until combined.


Fold in 1/2 cup of the walnuts.


Pour batter into prepared pan and top with remaining walnuts.


Bake 1 hour or until bread is golden brown and a toothpick inserted in the center of the loaf comes out clean.


Let cool slightly then loosen sides from pan, remove loaf and serve warm or let cool completely before serving.
