Apple, Raspberry and Pear Baked Oatmeal

A double dose of vanilla — in both the yogurt and vanilla extract — makes this easy, baked breakfast dish irresistibly rich and fragrant. Serve at brunch, or cut into slices and pack for breakfast, to eat warm or cold.

Ingredients

    Sunflower seed oil, for pan
    1 package (10-ounce)frozen raspberries, not thawed
    3 cupsold-fashioned rolled oats
    3/4 cupchopped pecans, toasted
    1 1/2 teaspoonsbaking powder
    1 teaspoonkosher salt
    2Gala apples, cut in half and cored
    3/4 cupreduced-fat (2%) milk
    1 container(5.3-oz) vanilla whole milk yogurt
    1/2 cuppure maple syrup
    1 tablespoonpure vanilla extract
    2eggs plus 1 egg yolk
    2Bartlett pears, cut in half and cored
    2 teaspoonsground cinnamon

Method

Preheat oven to 375°F. Lightly coat a 9x13-inch pan with oil and line with parchment paper; set aside.


Cut half of an apple and half of a pear crosswise into 8 ¼-inch slices (16 total); reserve for topping. 


Grate the remaining apples and pears into a large bowl. Add oats, pecans, baking powder, salt and frozen raspberries.


In a medium bowl, whisk together milk, yogurt, eggs and yolk, maple syrup and vanilla; stir into oat mixture.


Transfer to pan and top with apple and pear slices; sprinkle with cinnamon. 


Bake until firm and golden brown, about 60–65 minutes. Cool for 15 minutes before serving.
