Apple Lokshen Kugel

Kugel is a baked noodle pudding traditionally served on the Jewish Sabbath. Our versatile, slightly sweet version works well as a dessert.

Ingredients

    8 ouncesegg noodles
    1/4 cupdark seedless raisins
    1/4 cup(1/2 stick) unsalted butter, melted
    4eggs
    3red apples, such as Pink Lady or Fuji, peeled and chopped
    1/4 cupsugar
    1 1/2 teaspoonsfine sea salt
    2 teaspoonsground cinnamon
    1/2 teaspoonvanilla extract

Method

Preheat oven to 350°F.


Coat a 9x13-inch baking dish with canola oil cooking spray.


Put raisins in a medium bowl and cover with hot water.


Soak until plump, about 15 minutes.


Bring a large pot of salted water to a boil over high heat.


Add the noodles and cook until tender, about 7 minutes.


Drain and reserve.


Meanwhile, lightly beat eggs in a large mixing bowl.


Add chopped apples and melted butter.


Drain raisins and add to egg mixture.


Stir in the sugar, salt, cinnamon, and vanilla.


Add the cooked drained noodles.


Stir well and pour into prepared baking dish.


Bake for 30 minutes, covered with foil. Remove foil and continue to bake until lightly golden, an additional 15 minutes.
