Apple-Molasses Switchel
Makes about 1 2/3 cups, enough for about 25 drinks

Vinegar-based beverages were a popular refreshment in the days before store-bought sodas. This ginger-infused “switchel” is a type of syrup that might classically be mixed with soda water, but it’s also great with lemon soda or a splash of rum. Watch our video.

Ingredients
- 1 cup cider vinegar
- 3/4 cup molasses
- 2 tablespoons finely chopped fresh ginger
- Ice cubes for serving
- Sparkling water, lemon soda or flat water for serving
- Lime wedges for serving
Method
Combine vinegar, molasses and ginger in a jar with a tight-fitting lid.
Shake well and refrigerate for at least 4 hours or up to 2 days.
Strain out ginger, rinse jar and pour mixture back into it.
Switchel will keep in the refrigerator for up to 1 month.
To serve, fill each glass half full with ice, pour in about 1 tablespoon of the switchel, and top off with sparkling water.
Garnish with a lime wedge.
