Apple, Pear and Candied Pecan Salad

Sweet and tart fruit, bitter greens, tangy cheese and luscious candied pecans all come together in perfect harmony. A crowd-pleasing dish that's great for fall family gatherings. Substitute store-bought candied pecans, if you would like to simplify.

Ingredients

    2 tablespoonssugar
    1 teaspoonground cinnamon
    1egg white
    1 1/2 cupsraw pecan halves
    2Bosc or other firm pears
    1red apple such as Fuji or Pink Lady, peeled if desired and thinly sliced
    1green apple such as Granny Smith or Pippin, peeled if desired and thinly sliced
    4 cupsfield greens or any baby greens
    1 mediumred onion, thinly sliced in half-rings
    1 cupcrumbled blue cheese or feta cheese
    1/4 cupextra-virgin olive oil
    2 tablespoonspear or raspberry vinegar
    1/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

Preheat the oven to 325F.


Spoon sugar and cinnamon into a large bowl or plastic bag.


Mix well and set aside.


Place egg white in a separate bowl, whisk until frothy, and add pecans.


Toss to coat completely.


Add pecans to cinnamon-sugar and toss well to coat all pecans.


Spread on a baking sheet and bake until golden brown, about 20 minutes.


Remove from oven and allow to cool, breaking them up with a spatula.


Meanwhile, in a small bowl, whisk together oil, vinegar, salt and pepper. Set aside.


In a large serving bowl, combine pears, apples, greens, onion, cheese, and cooled pecans.


Drizzle with olive oil mixture and toss to coat.
