Apple, Pear and Cucumber Salad

This crunchy, sweet and tangy salad mixes familiar fruits and veggies with a whole grain mustard dressing and apple cider vinegar. Serve this simple side dish with rich dishes like stews, paprikash or polenta.

Ingredients

    2 tablespoonsgluten-free mustard
    2 teaspoonsdried dill or 2 tablespoons fresh dill, chopped
    1/4 cupapple cider vinegar
    1/2 teaspoonbrown sugar
    1/4 cupolive oil
    2seasonal crunchy tart apples, such as Gala, Pink Lady or Braeburn, thinly sliced
    1ripe pear, such as Anjou or Bartlett, thinly sliced
    1English cucumber, sliced into thin rounds
    1 smallsweet onion, thinly sliced

Method

In a small bowl, stir together the mustard, dill, vinegar, sugar and olive oil. Set aside.


In a large serving bowl, toss apples, pears, cucumber and onion with dressing.
